Hot weather dinner ideas?

Oh yeah, it's really hot! No relief in the near future...ugh! What are you making for dinner in this kind of weather? I don't want to turn the oven on, so have been trying to think of things that don't require oven-time! I had some meatballs & sauce in the freezer, so we had meatball parm sandwiches last night...hardly any prep...were so good! Thinking taco salad for tonight, since all you have to do is brown the meat quickly.

What else? I'd love your suggestions!

  1. Here is an easy summer dinner:
    Cut up 3 or 4 good tomatoes and put them in a bowl with 1/2 cup of olive oil and some garlic. Let it sit for at least 30 minutes. Cook up a pound of pasta, drain and then pour pasta over the tomatoes. Top with some fresh gratted romano cheese. If you have some fresh basil, toss some in too! Its really good. Serve with a salad

  2. We've done Hoagies, Chicken Salad Sanwiches, Pork Roll, Cheesesteaks, Meatball sandwiches, Sausage sandiwches... pretty much anything you can think of that requires minimal stove time, or none at all! It is way too hot outside!

  3. Keep some homemade pasta salad or potato salad and grill up some chicken breasts real quick. Quick and easy supper.
